Dublin Dining
Chef Jean-Georges Vongerichten oversees the rooftop restaurant, which blends French, Asian, and Irish flavors using local ingredients. Dishes include Egg toast with caviar and herbs and Tuna Tartare with avocado, spicy radish, and ginger marinade. The hotel's sommelier and head bartender, Milan Ormanovic, curates the wine and cocktail selections; he recommends the Wild Strawberry, Ginger Margarita, and The Passion Fruit (alcohol-free). The Collins Club serves lunch, dinner, and cocktails and features an intimate vibe with music. A hidden minibar offers batch cocktails, Château La Coste wines, and alcohol-free beers.
Leisure Facilities
The Leinster includes POWER Gym with a heated plunge pool. A heated pool and jacuzzi are available, as well as a sauna and steam room accessible to wheelchair users. Personal training sessions with John Belton can be booked at reception.
