Main courses feature Whole roasted cauliflower with turmeric tahini and Parmesan-crusted organic chicken with artichokes. The Collins Club offers lunch, dinner, and cocktails, along with a selection of wines and crafted cocktails curated by the hotel's sommelier and head bartender, Milan Ormanovic. Milan Ormanovic recommends the Wild Strawberry, Ginger Margarita, and The Passion Fruit.
